This is my mother’s salsa recipe. It’s based mostly on how everything looks so the portions aren’t precise. But, here’s my best attempt:
Tomatoes and onions, diced small at about a 3 parts tomato to one part onion (1 cup tomato to 1/4 to 1/3 cup onion or so. Adjust to taste)
About 2 Tbsp. Cilantro
1/2 tsp. Garlic powder
Juice from 1/2 orange
Mix and, for best results let sit (refrigerated and covered) overnight so the flavors have a chance to marry.
As you can see, this salsa has no peppers in it. No heat at all, but tons of flavor. As I said, this is all approximate so make sure you taste as you go and adjust where you need to.
As soon as I get tomatoes out of the garden, I’m giving this a try! The orange intrigues me…I’ve got tons of green tomatoes, but no red ones yet!
The orange adds more sweetness than lime would. What’s funny is, I don’t actually like raw tomatoes. Like I said, this is my Mom’s recipe and it always gets rave reviews. Can’t wait to hear if you like it!
I’m going to yell at my tomatoes tonight to get them to turn red!
