I have monster zucchini because they keep hiding from me until they’re huge. The butternuts broke off the vine so they’re not quite ripe. And almost a dozen grape tomatoes that are twice the size of those we get at the store.
My son had requested tomato soup because he’d never had it. I had quite a haul of tomatoes a few days ago so I found a recipe for tomato basil soup and went to town. I have a little basil plant that’s limping along but it gave up enough leaves for the soup. It turned out light and delicious. I never thought I’d like tomato soup, but this is delicious. I had enough to make salsa as well. That went well at the cookout we had yesterday at the in-law’s house. Recipes to follow…
